Poultry youth campers develop new products

Dr. Jason Emmert conducts a product development workshop at the Poultry Science Youth Conference.

Dr. Casey Owens demonstrates the variety of products made from eggs to students attending the Poultry Science Youth Conference July 17-20.

Thirty-six high school students attended the Poultry Science Youth Conference July 17-20 organized and conducted by Gary Davis, Karen Eskew, Jason Emmert, Casey Owens and Jerry Wooley.

A highlight of the conference was development of new products by six teams of students after workshops led by faculty and a tour of the Tyson Foods Discovery Center for product development and research in Springdale.

The winning new product developed by a student team was called a Big Popper -- chicken breast meat stuffed with jalapeno flavored cheese, breaded and fried.

The youth conference is designed to broaden the high school student?fs understanding of the educational disciplines, scholarship opportunities, careers and industries related to poultry science.
