The HESC Curriculum Committee met on September 2 for a first reading of curriculum changes submitted by Food, Human Nutrition and Hospitality and Apparel Studies. On September 9, 2005, the committee met for a second reading. Following the second readings of the proposed changes, a vote was taken and the follow curriculum changes were passed. These changes will be brought before the HESC Faculty on September 16.
Area: Food, Human Nutrition and Hospitality
Concentration: Human Nutrition/ Dietetics
1. Major Change: Credit hour change HESC 3204, Nutrition for Health Professionals and Educators to go to HESC 3203, Nutrition for Health Professionals and Educators.
a. Justification: HESC 1213, Nutrition in Health, is now a prerequisite for HESC 3204. There will not be a need to repeat the information taught in HESC 1213 and the time needed to teach course information will decrease. Further, a three-credit course will facilitate course scheduling. Therefore, the new course number will be HESC 3203 to reflect the credit hour change.
2. Major Change: ADD: HESC 5264/5260L Medical Nutrition Therapy I, Medical Nutrition Therapy I Laboratory.
a. Prerequisites: Graduate standing and consent of instructor.
b. Justification: The graduate enrollment in human nutrition is increasing and graduate level courses are needed. Graduate students will be presenting a research based lecture on one of the medical conditions discussed during the semester and be graded using a more stringent grading scale. Graduate level will allow nutrition professionals to obtain continuing education hours needed for the Commission for Accreditation for Dietetic Education. This course will meet at the same time as HESC 4264/4260L. Medical Nutrition Therapy I was offered for dual credit at the 4000 level. In 1997, the graduate level was omitted when a change in course description was submitted. This was an error, which UAConnect identified this fall. Adding this course as the graduate level will rectify the previous error and eliminate confusion.
3. Major Change: ADD: HESC 5273, Medical Nutrition Therapy II.
a. Prerequisite: HESC 5264/5260L.
b. Justification: The graduate enrollment in human nutrition is increasing and graduate level courses are needed. Graduate students will be presenting a research based lecture on one of the medical conditions discussed during the semester and be graded using a more stringent grading scale. Graduate level will allow nutrition professionals to obtain continuing education hours needed for the Commission for Accreditation for Dietetic Education. HESC 5273 is a companion to HESC 5264/5260L. This course will meet at the same time as to HESC 4273, Medical Nutrition Therapy II. This course is now offered for dual credit. Adding this course as the graduate level will eliminate confusion.
4. Major Change: ADD: HESC 5223, Nutrition During the life Cycle
a. Perquisites: Graduate standing and consent of instructor.
b. Justification: The graduate enrollment in human nutrition is increasing and graduate level courses are needed. Graduate students will be presenting a research based lecture on one of the medical conditions discussed during the semester and be graded using a more stringent grading scale. Graduate level will allow nutrition professionals to obtain continuing education hours needed for the Commission for Accreditation for Dietetic Education. This course will meet at the same time as to HESC 4223, Nutrition During the Life Cycle. Adding this course as the graduate level will eliminate confusion.
5. Major Change: Drop dual listing for HESC 4273, Medical Nutrition Therapy II.
a. Justification: a graduate level course will be offered. Therefore, the dual listing will not longer be needed.
6. Major Change: Drop dual listing for HESC 4223, Nutrition During the Life Cycle.
a. Justification: a graduate level course will be offered. Therefore, the dual listing will not longer be needed.
7. Program Changes:
a. Dietetics Concentration:
i. Add CHEM 1074/1071L as an option for CHEM 1103/1101L and CHEM 1123/1121L.
1. Justification: Prerequisite for CHEM 2613/2611L is either CHEM 1074/1071L or CHEM 1103/1101L and CHEM 1123/1121L.
ii. Change check sheet to reflect HESC 3204, Nutrition for Health Professionals and Educators changing to HESC 3203
b. General Food and Human Nutrition Concentration:
i. Change check sheet to reflect HESC 3204, Nutrition for Health Professionals and Educators changing to HESC 3203
c. Each concentration, dietetics and general food and nutrition, will have its own check sheet.
i. Justification: An individual curriculum check sheet will clarify concentration course requirements for students, faculty and administrators.
Dr. Fitch-Hilgenberg made a motion to accept changes and bring them forward at the faculty meeting – Dr. Killian seconded. Motion passed.
Concentration: Hospitality
1. Major Change: Adding courses HESC 3613, Resort Management
a. Justification: Expansion of Hospitality and Restaurant Management option in Food, Human Nutrition and Hospitality concentration. This expansion will better meet the needs of our students employment and enhance career opportunities in the State of Arkansas.
2. Major Change: Add course: HESC 4643 Meetings and Convention Management
a. Justification: Expansion of Hospitality and Restaurant Management option in Food, Human Nutrition and Hospitality concentration. This expansion will better meet the needs of our students employment and enhance career opportunities in the State of Arkansas
3. Major Change: Add course: HESC 5643 Meetings and Convention Management
a. Justification: Expansion of Hospitality and Restaurant Management option in Food, Human Nutrition and Hospitality concentration. This expansion will better meet the needs of our students employment and enhance career opportunities in the State of Arkansas
4. Major Change: Add course: HESC 4653 Global Travel and Tourism Management
a. Justification: Expansion of Hospitality and Restaurant Management option in Food, Human Nutrition and Hospitality concentration. This expansion will better meet the needs of our students employment and enhance career opportunities in the State of Arkansas
5. Major Change: Add course: HESC 5653 Global Travel and Tourism Management
a. Justification: Expansion of Hospitality and Restaurant Management option in Food, Human Nutrition and Hospitality concentration. This expansion will better meet the needs of our students employment and enhance career opportunities in the State of Arkansas
6. Major Change: Program Change
a. Type of change: Change in Requirements
i. Justification: New courses have been developed and added to the curriculum. These curriculum changes have been adapted to strengthen the students' breath of knowledge and to meet industry needs.
ii. Changes include: Elimination of WCOB courses; addition of HESC program specific courses; replace MGMT 3743 with AGEC 2143, Agri. Fin. Records; replace WCOB 1033 with PSYC 2013 or equivalent; addition of Foreign language requirement; add AGEC 3303, Food & Agriculture Marketing
Mr. Powell made a motion to accept changes and bring them forward at the faculty meeting – Dr. Fitch-Hilgenberg seconded. Motion passed.
Area: Apparel Studies
1. Minor Change; for information only: HESC 4073 Internship –
a. Prerequisite changes: add HESC 3003 and consent of instructor
2. Major Change for HESC 4063 withdrawn.
Ms. Harding made a motion to accept changes and bring them forward at the faculty meeting – Dr. Killian seconded. Motion passed.
Area: Interior Design
Changes were submitted but not complete, therefore first reading will be at next scheduled meeting.
Committee Business:
The Curriculum Committee voted to make the following changes in the Committee Policy and Procedures Handbook
1. Page 2, Section A. Voting Members: The bylaws state that two members from each area shall make up the voting members. Interior Design and Apparel Studies are now separate area. The Committee voted to continue with two members from each area and Interior Design and Apparel Studies would have additional representation. Therefore, the Policy and Procedure Handbook should read:
"Nine representatives, including the School's Director, and two members from each of the following areas: Interior Design; Apparel Studies; Food, Human Nutrition and Hospitality; and Human Development, Family Sciences and Rural Sociology."
2. Page 6, under 2. Major Curriculum Course Changes, Section A, number 2.
a. The appendix is incorrect. 2.a.2 should read:
b. Properly formatted course outline (see APPENDIX A).
Dr. Whan asked that committee members think about the need for the HESC 4303 Professional Development class and what may be alternatives to this course. Dr. Whan asked that each area evaluate their need for this course.
